I backed up our Xserve to test the upgrade from 10.5 to 10.6 without ever taking the server down. I believe they can be used with DS as well for deployment and one of CCC's biggest advantages is it can take the image from a live system.
Another great tool is Carbon Copy Cloner for grabbing quick bootable images as well as incremental backups.
